How does Stripe escrow work?

The buyer pays via Stripe. Funds are held until delivery is confirmed, then released to the seller minus the 5% fee.

Can I list non-Shopify inventory?

Yes. While Shopify import is the fastest way to list, you can manually create listings for any surplus inventory.
